15 Fast Growing Vegetables – At Your Table In A Month!

We all want those tasty fresh vegetables from our own little indoor garden. But vegetables often take ages to grow!

So today I wanted to share with you my list of easy and fast-growing vegetables you can grow even indoors and also give you some basic instructions on how to prepare the things you’ll need.

Let’s begin!

15 Fast Growing Vegetables

1. Spinach

Spinach is that one vegetable you plant and forget about and the next thing you know you have a whole field of spinach in your garden.

Depending on the climate, spinach takes about 4-6 weeks to grow fully.

Spinach thrives during spring and can withstand even colder climates if you grow it indoors.

As far as summer is concerned, it’s not a problem growing spinach even in the hotter days as long as you water it regularly otherwise it will welt quickly.

To grow spinach you’ll need a basic compost (spinach isn’t too picky) and lots of water but try not to overdo the watering.

After about 5-9 days you’ll see your spinach sprouting and you’re good to go.

2. Radishes


Because of their size, radishes can be grown in any garden or even plant-pot regardless of size.

It’s the ideal vegetable to grow if you don’t have a garden or just want to grow some veggies indoors.

Also, it only takes about 4 weeks for radishes to grow fully and there’s not much hassle involved in growing them either.

You’ll need a medium-sized pot, basic plant soil with some mulch that has wood ashes and water.

Just dig a hole about 2” deep and plant the seed.

Water in moderation just enough to keep the soil damp and don’t wait for the soil to dry-out completely otherwise you’ll be left with miniature radishes.

3. Lettuce


Lettuce is also one of the best fast-growing vegetables you can grow in your garden because it only needs about 4 to 6 weeks to grow fully.

However, some lettuce varieties, for example, romaine lettuce, take even 3 months to grow but your plain leaf lettuce won’t take as long.

In the spring, plant it about 2 weeks before frost and in the fall plant it about 8 weeks before frost and you’re good to go.

Now, the things you’ll need to grow lettuce include:

  • Loose and cool soil with good drainage
  • A nice compost with lots of nutrients and minerals that provides more drainage
  • Watering the lettuce about 2 times a week and making sure that it’s always well hydrated

Once you plant your lettuce seeds, they’ll sprout in about 10 days or 2 weeks and when the leaves start to develop, cut them to 3” to stimulate further growth.

4. Peas


Peas are one of the best fast-growing vegetables for garden conditions but you can also grow them indoors just do know that they can grow up to 3ft.

They grow seasonally and it’s best to plant them about 4 weeks before the last spring frost date if it’s not too cold outside.

Before you plant your pea seeds, put them in a container with water overnight to stimulate germination.

After that just use your garden or a large pot and plant the seeds 1” deep and in rows about 12” inches apart.

When watering your peas, don’t overdo it but also make sure to keep them well hydrated so once a week should be enough.

Your peas should be ready for harvesting in about 3-4 weeks.

5. Bush Beans

If you don’t have a garden, you should consider skipping planting bush beans because they need a lot of space to grow.

Because these beans are warm-season vegetables, you should plant them when it starts to get a bit sunny, usually at the end of March or start of April.

Typically, bush beans need about 2 months to grow fully which is quite fast compared to other kinds of beans which need about 3 months.

When planting bush beans you need to space them in rows about 24” apart and make sure that, when developed, their leaves are about 6” apart so that they don’t intertwine.

You can use your standard plant-soil just to make sure that its pH levels are neutral and that it has good drainage.

As far as watering is concerned, you should water them once or twice a week and make sure to give them about 2 or 3” inches of water.

My tip is to water them at night so the leaves stay well-hydrated throughout the following day.

6. Scallions


Whether you’re into gardening or not, everyone knows that some fast-growing vegetables indoors include scallions.

They’re easy to plant, don’t take up much room (they reach a height of 8” max), and they aren’t a hassle to grow.

They do need about 8 to 10 weeks to be fully grown but this is a lot quicker than growing onions.

The things you need to grow scallions include:

  • Well-drained and nutrient-rich soil
  • A plant pot of any kind, the bigger the better
  • Lots of water, you need to keep the roots submerged

I would just add that you’ll need to drain the pot at least once a week and replenish it with fresh water until the green shoots emerge after which you just need to keep your scallions well hydrated.

7. Bok Choy

Bok Choy only takes about 45 days to mature properly and then you can enjoy it in your soups, salads, and other dishes.

To grow Bok Choy you need to have nutrient-rich soil with good drainage and it won’t hurt to throw a bit of good compost in the mix.

When planting your Bok Choy make sure that you plant the seeds in rows, about 10” apart and make sure that you pick a spot in your garden where there’s some shade.

Bok Choy handles the sun very well but it thrives in shadier areas and should only receive about 3-5 hours of sun daily.

You should water your Bok Choy as frequently as possible because this plant soaks up water like a sponge so always keep the soil moist.

8. Baby Carrots

Baby carrots grow faster than regular carrots and only take about 6-8 weeks to be ready for harvesting and you also don’t need a garden to grow them.

To grow baby carrots you’ll need to put the seeds in nutrient-rich soil with good drainage and lots of fertilizer.

I suggest using a liquid houseplant fertilizer if you’re growing them indoors, and a special carrot fertilizer if growing them in your garden.

Because carrots need lots of sunlight to grow, place them near a window and make sure they get approximately 5 hours of sunlight a day.

You should also keep your baby carrots well hydrated and water them twice a week or when the soil feels a bit dry.

9. Turnips


Turnips can be grown in all seasons except in the winter but are best to plant it in the summer and autumn months.

When planting turnips make sure that the seeds are evenly distributed about 4-6” apart and into rows about 12” apart.

This way you’ll ensure that your turnips don’t intertwine.

Rich compost with lots of nutrients is your best choice but make sure that it has nice drainage as turnips need lots of water to grow.

Water your turnips at least twice a week and never let the soil dry completely and if you do a good job you can expect to harvest turnips in about 4-8 weeks.

10. Cucumbers


Cucumbers typically grow in the warmer months, especially in the spring and summer so you need to plant them in your garden when it’s at least above 60°F or 15°C.

You also need to sow the seeds at least 6 weeks indoors before planting them in your garden to get the best results.

When you’re ready to transplant the seeds, you need some aged compost and my suggestion is using a planting mix as well.

Because cucumbers are 95% water, you need to soak them in an inch of water at least once a week or, if you have a soaker hose, let it drip near the roots so water can be absorbed better.

Usually, it takes about 50-70 days for cucumbers to be ready for harvest which is quite quick compared to other vegetables of that size.

11. Kale


Kale is another superfast vegetable to grow and it takes about 50-70 days for it to be ready for harvest if you use seeds but using a transplant will get it ready in just 40 days.

My suggestion is using transplants as it’s not only more practical because you already have the kale growing but also will save you the hassle of spacing the seeds apart from each other.

Plant the kale at the beginning of spring or autumn when it’s still a bit chilly but also sunny.

Use a neutral pH level soil with good drainage as you don’t want your kale to be fully submerged in water.

Then just water your kale when the soil feels a bit dry but not completely just so the kale keeps on absorbing water and you’re done.

12. Arugula


Arugula is, in my opinion, one of the easiest and fastest vegetables to grow because in just 20 to 40 days you can already harvest it.

It doesn’t even need much space so you can even plant it in a medium or a large pot.

It’s a cool-season plant so you want to plant it in the early spring or autumn for the best results.

Just use some regular soil with high nutrients and water it once a week to keep the soil nice and wet.

You’ll need to cut about an inch or two of the leaves every two weeks not only to promote further growth but also to keep your arugula at a certain height as it can grow up to 2ft.

13. Corn Salad

Corn Salad is best grown in the cooler months making it an ideal vegetable if you want to have some indoor winter harvests.

The things you’ll need to grow corn salad are:

  • A medium to large size pot
  • Fertile soil ranging between 6.5 and 7 pH level
  • A sunny spot or with a partial shade
  • Watering about 2 times a week or when the soil is a bit dry

Once you’re done, you can enjoy your corn salad in about 3 to 4 weeks.

14. Mustard Greens

Because it only takes about 4-6 weeks to grow mustard greens it’s no wonder why it’s a popular choice among garden lovers.

You don’t even need a garden to plant it, just a medium-sized pot, a bit of acidic soil (below 6.8 pH), and frequent watering.

Mustard greens are a seasonal vegetable so you should plant them in early March or September for the best results.

15. Garlic and Garlic Greens

I saved the best for last because garlic greens are one of the fastest vegetables to grow.

Just plant some garlic in a pot of any size, give it some rich soil with nice drainage and lots of water and wait for the magic to happen.

While you’re waiting for your garlic to be ready for harvest, you can cut off the garlic greens which will grow in about 7-10 days and are quite delicious.

You’ll need to wait about 4-8 weeks for your garlic to grow but at least you’ll have some delicious garnish.
